Sweet potato is a starchy root vegetable belonging to the family of Convolvulaceae. It has a hard texture and an earthy and mildly sweet taste. The colour of its flesh ranges from orange to off-white to purple. It can be cooked in many ways and has a creamy and soft texture.

From managing diabetes to reducing the risk of cardiovascular diseases, sweet potatoes have several health benefits. They are highly nutritious and are rich in vitamin A, vitamin B5, iron, calcium, sodium and protein. Here are 4 easy and delicious recipes that you can try with healthy and nutritious sweet potatoes.

Candied sweet potatoes

In a bowl, mix ½ butter, ½ cup sugar, ½ tsp cinnamon powder, ¼ tsp nutmeg, 2 tbsp honey, 1 tbsp vanilla essence. Peel and thinly slice 2-3 sweet potatoes and add to the bowl. Coat the potatoes with the batter and transfer them into a baking tray. Bake at 400 degree celsius for 20-30 minutes.

Sweet potato fries

Peel and cut 3-4 sweet potatoes into 1-inch slices. Mix these with some chilli powder, cayenne, salt, pepper, olive oil and paprika. Heat some oil in a pan and deep fry these till they turn golden brown. Serve hot.

Roasted sweet potatoes

Preheat the oven to 350 degree celsius. Place 2-3 peeled and sliced sweet potatoes on a baking tray. Drizzle some oil on top and season with salt and pepper. Bake for 30 minutes and serve hot.

Sweet potato brownies

In a bowl, blend 1 cup brown sugar, ½ cup white sugar, ½ cup unsalted butter and keep aside. In another bowl, mix 2 tbsp vanilla essence, 3 eggs, 1 cup refined flour and 1 tbsp baking powder. Add some salt and mix the blended ingredients. Add 1 cup finely shredded sweet potato to this and pour into a baking tray. Bake for 25 minutes at 350 degrees celsius.
